J’s Curry Crab

Aromatic Curry Crab 

3 mud crabs
3 tablespoon cooking oil
3 tablespoon A1 seafood curry paste
200 ml water
1 egg

2 sticks lemongrass, sliced course
1 sprig curry leaves
2 pandan leaves cut into 5cm pieces
1 medium sized brown onion, sliced
3 table spoon sweet soy sauce
1 ginger flower cut length wise 

salt to taste

a handful of basil leaves for garnish

1. Clean crab and chop into pieces
2. In a wok, add oil and heat on medium heat. Add lemongrass, pandan leaves and curry leaves. Sauté until fragrant. 
3. Add curry paste and sauté for 2 minutes.
4. Add crab and turn the heat on high. Stir to coat the crab with the paste and spices.Cover with lid and cook for 5 minutes.
5. Add water, sweet soy sauce, brown onion and ginger flower. Stir evenly. Lower the heat to medium, bring it to the boil and continue to cook crab for approximately 10-12 minutes or until crab shell turns red and crab is cook.
6. Add salt to taste. Crack the egg and stir evenly. Continue to cook for 2 minutes.
7. To serve, place crab on a serving platter and garnish with basil leaves. 

Serve hot and enjoy it with rice. Bon Appetite!
